“More than just good wine” also refers to a modern wine tourism facility where we combine the atmosphere of a vineyard with comfort, architecture and professional organisation. We offer a wide range of tastings, workshops and wine-related programmes, as well as educational sessions and themed tastings led by winemakers.

We also offer a wide range of services for businesses — team-building activities, team meetings, outdoor events, conferences and business meetings set against a natural backdrop. The Kazimierz terroir – geological and climatic profile and cultivation philosophy

The Kazimierskie Wzgórza vineyards are situated at altitudes of 175–214 metres above sea level, on loess hills with a limestone subsoil, within the distinctive landscape of loess ravines. The loess soils, which are well-drained and slightly alkaline, are characterised by a high content of minerals and silica, which promotes a balance between water and air and moderate water stress – key factors for the concentration of aromas and structure in the fruit.

The proximity of the Vistula River shapes the region’s distinctive mesoclimate: high levels of sunshine, significant daily temperature fluctuations and moderate humidity. The varied exposures of the slopes and the microclimates of the ravines influence heat accumulation and the rate at which the grapes ripen, determining their level of phenolic and aromatic ripeness. The synergy of loess, limestone bedrock, slope gradients and the influence of the river valley creates a distinctive terroir, conducive to the production of wines with a mineral character, an intense aromatic profile and a balanced acidity-tannin structure.

The vineyard’s uniqueness also stems from the diversity of its plots: Wylągi, Skowieszynek and Jeziorszczyzna, situated on slopes with varying gradients, exposures and thermal conditions. Each plot is managed individually, taking into account the specific characteristics of the soil, microclimate and varietal potential. The basis of the work in the vineyard is a regenerative and precise cultivation model, which minimises interference with the soil, supports soil microbiology and maintains the biological balance of the habitat.

The same grape varieties — including Chardonnay and Solaris — grown on different plots exhibit distinct differences in the acidity profile, extract content and aromatic profile of the grapes. The diversity of the terroir allows for selective vinification and the creation of blends for still and sparkling wines using the traditional method, combining components with distinct characters and the mineral expression of the terroir.

The result is a portfolio of wines characterised by precision, a distinct structure and a clear expression of terroir — wines in which the differences between plots are deliberately used to shape the style.

regenerative farming

Our work in the vineyard is based on regenerative viticulture, understood as a method of vine cultivation that not only makes use of nature’s resources but also supports the restoration of soil life, biodiversity and the natural balance of the ecosystem. This approach involves working with nature rather than trying to correct it.

In practice, this means minimal disturbance of the soil, developing ground cover between the rows, caring for the soil’s microbial life, and focusing our efforts on the health of the vine rather than on maximising yield. We deliberately reduce the yield – limiting the number of fruits on the vine so that the plant’s energy is focused on developing the aroma, structure and balance within the bunches.

Our philosophy is defined by a focus on quality rather than quantity. We manage each vineyard plot individually, and our decisions are based on the condition of the vines, the specific characteristics of the terroir, and the potential of the vintage in question. This enables us to create pure, elegant and authentic wines — wines that are a true reflection of the place where they are made.

Environmental protection is in our DNA

In our work, we are guided by the principle that a vineyard is part of an ecosystem, not merely a place where grapes are grown. That is why we manage our vineyard in an ecological, sustainable and responsible manner, combining regenerative farming with care for the soil, water, landscape and biodiversity.

Water — conservation and natural retention

We ensure responsible water management by:

  • minimising soil disturbance and preserving the natural water retention capacity of loess,
    developing ground cover between rows, which reduces evaporation and erosion,

  • the collection and reuse of rainwater in industrial processes.

  • promote the development of the edaphon (humus) in the soil, which improves soil structure and water retention

Waste — minimisation and responsible material management

At the vineyard and throughout the production process, we strive to reduce waste at source, for example by:

  • the separate collection and recycling of glass, paper, plastics and raw materials,
  • the reuse of infrastructure components and technical materials,
    reducing plastic use and choosing packaging with a lower environmental footprint,
  • the use of biomass in the vineyard as organic matter to improve the soil.

Reducing pollution and environmental impact

Our farming philosophy is based on minimal use of chemicals and the protection of biodiversity through:

  • working in the spirit of regenerative agriculture and low-carbon practices,
  • reducing the number of machine passes and fuel consumption,
  • the use of preventive rather than curative measures in plant protection,
    the protection of natural habitats around the vineyard, including tree cover, beneficial insects and soil microbiology.
