We believe that sparkling wine isn’t just for New Year’s Eve or special occasions. Our wines are made to be enjoyed in the moments that happen right here and nowover dinner with friends, whilst cooking together, on a walk that ends with a toast, or to celebrate those little successes that are worth celebrating.

With their elegant design, refined label and distinctive packaging, our wines also make a beautiful and sophisticated gift — a present that conveys emotion, the history of the place and the joy of sharing a special moment. These are wines that say: ‘thank you’, ‘congratulations’ and ‘I’m glad you’re here’.

We produce sparkling wines that are perfectly suited to the global culinary scenedesigned for harmonious food pairing, to complement exquisite dishes, delicate textures and the subtle flavours of signature cuisine. Their elegance, freshness and precision make them ideal wines for the table, for the kitchen, and for celebrating flavour.

Production stages – the traditional method

Wzgórza Vineyard — precision in production, varietal character, the power of terroir

Our sparkling wines are produced using strictly defined processes and a method that relies on consistency, craftsmanship and time. Every bottle begins its story in the vineyard — amidst the loess hills and cool climate of the Kazimierz Hills — but its character is shaped in the cellar, through the traditional method and long ageing on the lees. We use both Vitis vinifera varieties and carefully selected PIWI varieties in our production, which allow the terroir’s potential to be fully expressed.

We have divided our sparkling wines into three distinctive style categories, centred on the concepts of aromatic expression, grape variety and ageing.

Wzgórza Winery — a triangle of quality and technological standards

Our sparkling wine production system is based on the quality model set out in the application to the European Commission for the registration of a Protected Designation of Origin (PDO), which has already been submitted and is currently undergoing the approval process.

Each category is defined by the length of maturation on the lees, the selection of varieties, the stylistic character, and strict criteria regarding origin and production methods.

All sparkling wines are produced using the traditional method (secondary fermentation in the bottle) and in accordance with uniform quality standards:

  • the grapes come exclusively from the municipality of Kazimierz Dolny,
  • processing, vinification and secondary fermentation take place exclusively in the municipality of Kazimierz Dolny,
  • harvested exclusively by hand, into crates with a maximum capacity of 35 kg,
  • pressing of whole bunches — gentle, in stages, with priority given to the purity of the must,
  • selective vinification of plot-specific batches and blending of the cuvée based on the characteristics of the raw material,
  • control of acid structure, extract balance and ageing potential.

CLASSIC

Character: wines made from blends of several grape varieties, including Vitis vinifera and PIWI varieties.
Stylistical aim: freshness, aromatic character, acidity, light structure.

Technical specifications:

  • base wines fermented in stainless steel,
  • emphasis on aromatic purity and a crisp structure,
  • ageing on the lees: a minimum of 12 months,
  • autolysis aimed at developing subtle baked notes without losing the fruit’s vitality.

Profile: fresh, mineral, aromatic, with distinct fruitiness and lively acidity.

PREMIUM

Character: wines made from various grape varieties (single-varietal or blends), offering greater complexity and depth of structure.

Technical specifications:

  • selection of components with higher concentration and extract,
  • the possibility of partial fermentation or ageing of the base wine in barrels,
  • ageing on lees: minimum 24 months,
  • extended autolysis: notes of brioche, bread, almond and a creamy texture,
  • dosage selected to balance structure and acidity.

Profile: structured, harmonious, food-friendly, with distinct minerality and a long finish.

RESERVA

Character: wines made exclusively from noble grape varietiesincluding Chardonnay, Pinot Noir and Rieslingwhich are characterised by a long ageing process.

Technical specifications:

  • selection of the finest vineyard plots and grapes with the greatest ageing potential,
  • base wines with low alcohol content and high acidity,
  • ageing on the lees: a minimum of 36 months (or longer),
  • extensive autolysis and micro-oxidation in the bottle,
  • a style focused on longevity, complexity and finesse,
  • minimal dosage or towards Brut / Brut Nature.

Profile: multi-layered structure, creamy texture, mineral tension, long, precise finish.

The ‘Quality Triangle’ classifies our sparkling wines according to age, grape variety and stylistic complexity — ranging from aromatic and fresh wines, through harmonious and food-friendly wines, to serious, mature and collectible wines. Each category retains the distinct signature of the Kazimierz terroir and is produced with the utmost technical precision.
